Building Food Security: Canning, Dehydrating, and Freeze Drying by Lori Roets Valone

Being a person who has recently started canning over the last three years, it has been quite the process for me to get things right. Lots of advice and suggestions on the internet, but I have to say, this book is great. First off, the multiplier worksheet is great. Everyone at our home is considered adults, so I've always wondered how much to can or keep versus too much. Another factor is calorie needs. This is huge considering I'm now dealing with blood pressure, triglycerides, and of course cholesterol. The book gives a breakdown of the different foods to store and body mass per calorie needs. Storage for long term and how to plan for it along with what you actually need has been eye-opening. I am now more confident in the process and what to use in order to make sure it keeps for long periods of time.

The canning tips, tools and even how to pressure can is very informative with lots of hints for helping out the canning process. Loved it. Been doing it three years and found tons of information I wasn't privy to doing. The book also covers dehydrating which I've only tried last year with drying out herbs to use in cooking along with garlic and making sundried tomatoes. Next is freeze drying, something I've never done, nor know anything about. We always have tons of left over veggies we end up pitching, but you can freeze dry them and save for future use. Who doesn't want to save on their wallet? This book contains tons of recipes for canning, freeze drying, and dehydrating all kinds of foods including meat! Who knew? I didn't. It has the process for starting step by step and worksheets to assist. 100% back this book and recommend highly if you are someone who wants to learn how to save money by growing your food and saving the food you buy that the family doesn't finish eating.
